Fresh, dried dill leaves (often called “dill weed” so it’s not confused with dill seed) are used as herbs mostly in Baltic areas and central Asia. Like caraway, it is fragrant and used often in cured salmon, borscht and other soups and pickles. Use fresh dill, as dried dill loses flavor quickly.
Dill seed, on the other hand, serves as a spice. It tastes like caraway but also can seem like dill weed. Dill seeds were often used to calm the stomach after meals.
